Pancakes

1½ cup (190g) Flour
1 tbl (10g) Sugar
3½ tsp (10g) Baking Powder
½ tsp (2g) Cinnamon
1¼ (295ml) milk/buttermilk/cream
3 tbl (45g) melted butter +butter for the pan
½ tsp vanilla
1 egg

Syrup
Apple Compote
(as seen in photo)

STEP 1:
In a large bowl mix all dry ingredients together making sugar it blends completely.

STEP 2:
Make a well in the middle of the flour mixture and pour in the milk, melted butter, egg and vanilla. You may need a little more milk for a nice creamy consistency. If its too thick the batter will not spread and will not cook evenly, If its too thin it will cook faster but result in flat and chewy pancakes.

STEP 3:
In a heated skillet on medium heat place a tab of butter and then add the batter a cupcul at a time depending on how big you want the pancake to be. I use a measuring cup . Once the edges begin to bubble and pull up away from the pan it is safe to flip it over to cook the other side. (Do not turn the heat up as it will result in overcooked pancakes and the inside will still be doughy) Than cover with you favorite toppings!

(Makes about 8 pancakes)
